These healthy oatmeal waffles are quick to whip up! This recipe will make about 5 mini waffles, 2 Belgian-style waffles, or 1 large (4-slice) waffle. If you're making waffles for your family, you may want to double it.

Ingredients
1cupoat flour
1tspbaking powder
1/4tspsalt
2tbspflax seed(optional)
1/2cupalmond milk
1/4 cupGreek yogurt or unsweetened applesauce
1/3cupegg whites(whipped to form stiff peak)
1tspvanilla
2 tsp honey
1/2tspapple cider vinegar
Instructions
Preheat waffle iron.
Mix together dry ingredients (oat flour, baking powder, flax seed, and salt).
In a separate bowl, mix together all the wet ingredients except the egg whites (almond milk, Greek yogurt, vanilla, apple cider vinegar, and honey).
Combine the wet and dry ingredients.
Whip the egg whites until they form stiff peaks.
Slowly add the egg whites one scoop at a time and fold the egg whites into the batter.
Here's what the final waffle batter texture should look like.
Pour batter into your greased waffle iron and cook for 5-6 minutes (or as directed by your waffle iron). Repeat with the remaining batter.
Top with your favorite fruit and enjoy!
Notes
While folding in the egg whites makes the waffles more airy, if I'm in a rush I'll throw all ingredients in the blender to make the batter.
